In the countryside of Paupisi (BN) on a calcareous and clay soil, from vineyard 20+ years old, during the second decade of October, we harvest grapes, in small crates, that’s were the winemaking process start.

WINE MAKING PROCESS
At the end of August the grape goes to the first meticulous process, we select the best cluster and cut away the other, this way only the best cluster will arrive to the harvest at the beginning of November. In the winery we destem and ferment about 15 days in contact with the skin and at a controlled temperature. When the alcoholic and malolactic fermentation id done, the wine age for 12 months in barrique. After the barrique the wine age for another year in stainless still. We bottle this wine without filtration (that’s why you can find same sediment in it) and keep it in bottle for six more months.
Powerfull wine that express all the main caratheristic of the variety. Ruby red color, with purple reflex, intense aroma, with fruit, spices and toasted notes. Balance and smooth, very long finish. Pleasant note of red fruit, the wine is adapt for long storage time. Ideal paired with soup, meat, half aged cheese.
Serving temperature 18/20°C. We advise to use a decanter, use a big wine glass is great to pair with rich dishes, pasta with meat, stew and aged cheese.. The best pairing you should not miss is with cod fish in casserole with capers, olives and tomatoes.
Keep the bottle in vertical position at a temperature of 18° max. Keep it faraway from light and hot places.
